Chicken Quesadillas

Cook Time: 8-10 minutes
Serves: 1 to 2

6" flour tortillas
Monterey Jack cheese, shredded
scallions, finely chopped
chicken tenders, chopped
vegetable oil
sour cream
3-ounces LaPaloma Salsa

1. Preheat flat top grill or griddle to 350 degrees. In a saute pan add oil and saute chopped chicken tenders until done. Drain oil and set aside.
2. Place flour tortillas on griddle and sprinkle about 2 ounces of cheese on each tortilla. Sprinkle a few chopped scallions on each tortilla. Add about 1 Tablespoon of cooked chopped chicken to each tortilla.
3. When cheese begins to melt and tortilla is golden brown, fold tortillas in half and remove from griddle. Serve quesadillas immediately on plates or platters. Garnish each plate with a dollop of sour cream and a small ramekin of LaPaloma Salsa.
